Guest guest Posted November 28, 2005 Report Share Posted November 28, 2005 When i saw this recipe in a recent copy of Taste of Home cookbook, i knew i had to try it, and that i could veganize it. First thing i did was cut it in half as i knew my kids would not eat it; they pretty much hate cooked carrots. *lol* But i loved it and was happy with the results. Might add some garlic next time, but otherwise perfect. Horseradish Creamed Carrots 1 lb. carrots, cut into 1/2 inch slices 1/2 cup vegennaise [or regular mayo, your choice] 1/4 cup soy milk [unflavored] 3 Tbs. prepared horseradish 1 Tbs. finely minced onion 1/2 tsp. salt pinch of pepper 1/4 cup finely crushed corn flakes cereal 1 Tbs. soy margarine, melted Place an inch of water in a pan, add carrots, bring to a boil. Reduce the heat, cover and simmer for about 6 to 8 minutes or until crisp-tender; drain In a bowl, combine mayo, soy milk, horseradish, onion, salt, and pepper; add the carrots and stir to coat. Transfer to a greased baking dish. Combine corn flake crumbs and melted margarine; sprinkle over carrots. Bake, uncovered, at 350û for 20 minutes, or until bubbly. Now i should have mentioned in my recipe post that am not sure if this is vegan because i don't know if the old corn flakes i used are vegan safe.
