Guest guest Posted November 28, 2005 Report Share Posted November 28, 2005 Vegan Satay 1 TBSP Light brown sugar (I use Wholesome brand Organic Dark Brown Sugar) 1 TBSP Curry powder 2 TBSP Crunchy peanut butter 1/2 Cup Soy sauce 1/2 Cup Fresh Lime juice 2 Garlic cloves, minced or pressed Crushed and dried Red Chili Peppers, to taste 1 pound seitan, very thinly sliced and cut into strips to fit onto the skewers If you are using the package seitan then you are not going to be able to do this, but just do the best you can when putting onto the skewers. I have omitted the skewers though when using the packaged seitan as it doesn't bode well. The Peanut Sauce 2/3 cup crunchy peanut butter 1 1/2 Cup Unsweetened coconut milk 1/4 cup fresh lemon juice 2 TBSP soy sauce 2 TBSP brown sugar (I use Wholesome brand Organic Dark Brown Sugar) 1 tsp grated fresh ginger root 4 garlic cloves minced or pressed cayenne pepper to taste 1/4 cup un-chicken stock 1/4 cup soymilk...they make this in cream too which is better for this, if not, just use it plain regular soy milk and add 1 TBSP vegan margarine. Marinade: Combine the brown sugar, curry, peanut butter, soy, lime, garlic and crushed chiles in shallow dish. Thread the seitan pieces on to skewers (water soaked bamboo skewers are traditional...I use the metal ones that I have already) Marinate the seitan in the sauce overnight in the refrigerator. You can marinate it at room temp for a couple of hours if in a hurry. Overnight though gives it a stronger flavor that I like. Peanut sauce: Combine peanut butter, coconut mild, lemon juice, soy, brown sugar, ginger, garlic and cayenne pepper in a sauce pan and cook over a medium heat til sauce is thickened, about 15 minutes. Transfer to a blender and puree briefy. Add the non-chicken stock and the soy milk-cream. blend until smooth. Set this aside. Can be made ahead and refrigerated. Return to room temp before serving. Preheat the broiler (you can do this on the BBQ too) Cook the skewered meat, turning, for crispy on the outside, just a couple of minutes on each side.
