I'm making this tonight so I can reheat it quickly in the morning for breakfast (cooking so doesn't appeal to me at 4 am). Quinoa Breakfast Pilaf for these cold mornings (adding more sugar makes a nice warm dessert too) Ingredients 1 c quinoa 2 c water 1 tsp sugar pinch sea salt 1/3 c dried cranberries 1/3 c currants or raisins 1 tbsp sliced almonds, toasted 1 1/2 c vanilla soy milk Rinse quinoa very well in a fine-mesh sieve and let drain. In a medium saucepan, combine water, sugar and salt. Bring to a boil, stirring to dissolve the sugar. Add the quinoa. Reduce the heat to medium, cover and simmer for 15 minutes. Remove the pan from the heat and let stand, covered, for 5 minutes. Gently toss the quinoa with the fruit and almonds. Serve with the (warmed if desired) soy milk.
