[recipe] Potato Curry~ vegan

This was inspired by a recipe i found in the

Simply Heavenly cookbook. i changed a few

things to my taste. This is very good and filling.

i served it with cooked spinach, rice and a salad.

i think it would be good with mushrooms added.

 

Potato Curry

 

1 small onion, chopped

1/2 medium bell pepper, chopped

1/2 tsp. hot pepper flakes

1/2 tsp sea salt

2 cloves garlic, minced

1 Tbs. olive oil

1 Tbs. curry powder

6 medium potatoes, cubed and boiled

 

Saute onion, pepper, pepper flakes, salt, and

garlic in the oil. Add the curry powder and saute

for about a minute more. Add potatoes. Reduce heat

and simmer for about 10 minutes.

Yield: 4 servings

This does sound good and is actually vegan. I think I will use a red bell

pepper, sweeter for me, and add some Agave Nectar sweetener. Don't ya just hate

it when someone changes your recipes? But you did it! LOL Monkey see, monkey do.

(don't finish that either)

Yeah, this one actually is vegan, unlike that carrot

thingie i accidentally made with non-vegan

horseraddish.... *grumble, grumble*

 

You go right ahead and change all our recipes. *lol*

How much agave nectar do you think you'll add?

I cook by taste so will have to go it slowly until I get it right. or close to

right. If I am having a sweet day I am in trouble.
