Guest guest Posted December 1, 2005 Report Share Posted December 1, 2005 This was inspired by a recipe i found in the Simply Heavenly cookbook. i changed a few things to my taste. This is very good and filling. i served it with cooked spinach, rice and a salad. i think it would be good with mushrooms added. Potato Curry 1 small onion, chopped 1/2 medium bell pepper, chopped 1/2 tsp. hot pepper flakes 1/2 tsp sea salt 2 cloves garlic, minced 1 Tbs. olive oil 1 Tbs. curry powder 6 medium potatoes, cubed and boiled Saute onion, pepper, pepper flakes, salt, and garlic in the oil. Add the curry powder and saute for about a minute more. Add potatoes. Reduce heat and simmer for about 10 minutes. Yield: 4 servings ~ pt ~ This I believe: That the free, exploring mind of the individual human is the most valuable thing in the world. I think I will use a red bell pepper, sweeter for me, and add some Agave Nectar sweetener. Don't ya just hate it when someone changes your recipes? But you did it! LOL Monkey see, monkey do.
