Hungarian Cumcumber salad

 

one cucumber (I like English best)

salt

vinegar and sugar

water

optional dill weed, sweet paprika, sour cream

 

 

 

For Hungarian cucumber salad you very thinly slice cucumbers on a

mandoline and salt them freely and let it stand in a bowl for about

1/2 hour until a lot of liquid comes out. Then you squeeze the excess

liquid out as well as you can, and if you think it necessary, rinse

off some of the saltiness and put the slices in a bowl.

 

Make a sweet and sour dressing with about 1/2 cup of vinegar, 1/2 cup

of sugar, and a cup of water. Correct the amounts as you think

necessary. Pour this over the cucumber slices. You may add a few

teaspoons of dill weed, a teaspoon of paprika, or some sour cream

thinned in the vinegar-sugar-water mix if you like.

 

I'm afraid I often don't have exact measurements for what I am

cooking, unless it is baking when it seems more essential. But I don't

bake a great deal.

Thank you. I will have to try this next summer when I'm overloaded with

fresh cukes from the farm I to. I would substitute stevia for

the sugar, because I can't eat sugar. Sounds yummy. I don't often use

exact measurements, either. Fortunately, my mom is a great cook. As a

kid, we helped and watched a lot, so we learned lots of things. Now, as

an adult, I experiment with all sorts of spices and such. On those rare

occasions when I have friends over, they always want recipes for things

I just " made up " as I went along.
