I'm 60 years old and live in Ohio. My youngest, 23 year old son Andy, living at home, senior in college, has been a vegetarian for 5 years and I like to get ideas for things he will like. So, since I don't cook separate meals for him, my husband and I often eat vegetarian. From a Chinese professor he learned about tossing frozen tofu into boiling water before draining it. This gives a much better texture and it will pick up any flavor from marinade. I'd been freezing and then just thawing and draining before. A vegetarian dinner we like which I don't think is very well known is paprikas mushrooms. (It is lacto-vegetarian, like Andy.) Slowly sautee about 2 lbs of mushroomd (you can mix whatever sorts you like) with two or three onions in the oil of your choice. When the onions are soft and transparent, but not browned, add a tablespoon of Hungarian sweet paprika (we like Pride of Szeged) and salt to taste. Stir it around a few minutes, but do not let the paprika burn which will make it bitter. Add a cup of milk with a good tablespoon of flour blended in. When this has thickened add a pint of sour cream thinned with milk. Cook for a few more minutes and serve with rice or noodles or the bland starch of your choice. Serve with a salad of mixed greens or with Hungarian cumcumber salad. We eat breakfast early and it is not vegetarian. Andy might eat tortillas for breakfast if it is a weekend.
