Left over massive amount of mashed tater ideas?

Hi all. I've got a huge container of mashed potatoes. Any ideas on what to

transform it into. I was going to do Latkes but just realized that the

potatoes need to be grated, not mashed. I just heard that since the taters

have half n half and butter, you could freeze it in small batches and use it

as a base for soups and such later on.

 

I might do the latter but I'm looking to make something as well. Any ideas

would be appreciated. Thanks.

Hi Shawn, these are my favorite smashed tater recipes, hope you like them too.

 

Cassarole

saute some garlic, onions and mushrooms.

mix with smashed taters in a baking dish.

bake in 350 F for about 30 min.

this is the basic cassarole.

 

variations:

spinach or kale , corn, shredded cabbage ( sauted or steamed first ), really

any veggie or combination, good way to use up leftovers.

cheese on top, or mixed in, or both.

a bit of sour cream on top when you serve it is good.

 

Quicky Soup

thin smashed taters with milk or water to desired thickness, add garlic/+or

onion to taste. medium heat, stir while heating so the milk ( half and half) in

them doesn't scorch. dish up and enjoy !

 

Salad

add pickle relish, chopped celery, chopped or sliced olives, chopped onion,

dash of mustard, some mayonnaise, miricle whip type dressing or vegan substitute

and anything else you like in potato salad. mix it all up. serve as salad or

sandwich filling.

I know you can still do potato pancakes with mashed taters... and you

can make a good potato soup with it all. Also, have you got an oven

yet? My mom's Junk In The Oven, vegetarianized, is good...

 

layer in the bottom of a casserole cooked soybeef crumbles (or

flavored tvp, or even veg sausage chunks)... top with tomato sauce of

your liking, top with mashed potatoes... cover with foil bake til hot,

at the end uncover and add some cheese and bake uncovered til the

cheese is bubbly...

I would use them for quesadillas, burritos, enchiladas, or bread.

Oh, and someone else mentioned casserole which made me think of

Pierogi Casserole. Basically just leftover mashed potatoes, pasta,

sauteed onions, margarine and cheese (optional), all mixed together

and heated in the oven. I've also tried a spicier version with

chilies, corn and cumin. Let us know what you come up with!

make vegan fried " chicken " !

 

soak some tvp in enough hot veggie broth to re-constitute it all. mix

in enough mashed potatoes to make it stick together like patties or

nuggets, and roll the whole thing in crushed corn flakes or bread

crumbs. pan-fry or bake at 350 till crispy.

(everyone please keep the ideas rolling). Great ideas, all of them. I am

definitely going to experiment with the vegan fried chicken even if it's

just a small batch. That sounds very interesting.

 

The casserole dishes! mmmm. I miss me's the casseroles. Those sounded

great (near drool great). No, I still don't have an oven but it's basically

by choice - I'm redoing my kitchen and without counter tops, I've added a

temporary big table to do the mixing/chopping/small appliance bits on and

with that big table, adding an oven would leave me twisting and turning

through a mini, tight labyrinth. The kitchen is a quirky set-up.

 

Amy, I still need to get that Crockpot casserole ckbk you recommended.

Maybe it will tide me over until the oven. I can take a gas torch to the

top to brown the top part, LOL.

 

Oh, I'm thinking of combining a few ideas. Mix in the baked tater bits

(cheese, green onion, breakfast strips chopped) and then form patties and

fry for potato pancakes. Maybe add a dollop of (reg. or vegan) sour cream

when ready to eat.

My mother always used to make mashed tater patties, you just make 'em into

little cake-like shapes and cook 'em in the skillet, cookin' about 2 minutes

on each side until lightly browned--in a lacy sort of pattern. My brothers

and I liked 'em with ketchup as children, but nowadays I prefer " ballpark "

mustard.
