Guest guest Posted December 2, 2005 Report Share Posted December 2, 2005 hey shawn, you can make potato cakes with mashed potatoes. really, all you have to do is form into a patty and fry in butter or oil. you can add flour and/or eggs if you mashed potatoes are too thin. you cold use them to make soup or chowder. thin the potatoes with veggie broth for potatoe soups. add sauteed leeks for a different version. also, you can add corn (and roasted red pepper or chiles) to make a corn chowder. add cooked and pureed spinich or watercress for a yummy soup. you can add kale to the mashed potatoes. look for a colcannon recipe and modify it to use your leftovers. use your mashed potatoes to make irish potato candy or some kind of potato bread. i'm sure you could find recipes online. and finally, you can top a mound of mashed taters like you would a baked potato. add sour cream, chives, cheese, fakin bacon bits. or, top with broccoli and cheese sauce. i have heard that there are actually restaurants that only served topped mashed potatoes. hope this helps, susie --- subprong <subprong wrote: > Hi all.
