Bet you could use it for a lot of different recipes too. I am always missing good white sauces and I love sauces especially on veggies. Thank the goddess I never like cheese since I see so many of you are having problems giving that up. <smiling> Soy milk has worked for me as a excellent replacement for cow's milk and the various ways of replacing eggs has been great. Our local wonderful bakery has wonderful vegan treats and they have been really gracious in sharing what they use. I tried vegan Hip Whip, kind of like cool whip, for fruit salad. It was passable, but doesn't blend smoothly and kind of glumps. I don't think I would use it again. We were afraid to mess with it so just used it as is. Oh, and by the way it is made by the Now and Zen people. I know that the bakery uses a whipped stuff that is really good and it comes out of a aerosol but can never remember the name...will have to ask unless some of you have a clue.
