If I " accidentally " let the onions, garlic and jalapenos (the Texas trinity or The Three Amigos) go to long...oops, oh well and all the better. Recently, I honestly did let them go too long for a stuffing recipe (non slowcooker). I added a bit of water to reconstitute the burnt bits in the pan - let me tell you after I added that to the stuffing it was great. Best stuffing yet.
