On the outside of the pineapple are those pentagram shaped segments called eyes, and you want the size of those eyes to be the same from the top to the bottom of the pineapple. That is a good indication that the pineapple had time to mature on the plant before having been harvested. Unlike other fruits, pineapples do not get sweeter or ripen sweeter after picking, like tomatoes, peaches, and bananas do. All the sugar that goes into the pineapple comes from the plant. Color is also not as good an indicator of a pineapple's sweetness. A pineapple can be bright orangy-yellow, and be yucky if those eyes are small on the top of the fruit compared to the middle and bottom eye size. A green pineapple will turn orange-gold after being picked, but if it is picked before those eyes had time to fill out, it won't taste very sweet & juicy.
