I grabbed this recipe from the files. I was wondering if you all have a favorite or have any ideas, please. I hadn't thought about adding garlic as this recipe suggests and that sounds good. I'm thinking to add green onions instead of regular yeller or white. Also, I'm thinking of using whole cream in whatever I come up with. Any ideas - I'm looking for I guess a pretty traditional baked potato soup. Meaning, not the broccoli and cheese potatoes or veg. chilli taters. Just the ole standard spud flavor with cheese, sour cream, butter and green onions. Yes, this is definitely a lacto veg. recipe. LOL. Thank you for any input, Shawn Sherri Baked Potato Soup 3 – 4 lbs potatoes, scrubbed and pierced with a fork in several places (the more potatoes you have the thicker the soup will be) 1 tbsp butter 1 ½ cups onions, finely chopped 2 tbsp garlic, minced 1 can vegetable broth 3 cups milk 1 tsp salt ¼ tsp pepper Toppings: grated cheddar, chopped scallions, bac-o's (or other vegetarian bac'n bits) Bake potatoes in 400F oven, approximately 1 hr (or until tender). Cool, then peel. Sautee onion and garlic in butter in a large soup pot. Cover and cook until soft, but not browned. Add 2/3 of the potatoes. Mash well. Add broth, milk, salt and pepper. Simmer, stirring occasionally til desired consistency (I like mine really thick). Cut remaining potatoes into small chunks and add to soup. Stir gently til heated. Serve toppings to be sprinkled on individual servings. Note: if the soup doesn't get thick enough, you can thicken it with a little corn starch and water. I will probably make them and the soup in the middle of the week or the weekend. I'll up the smoke flavor indeed thank you.
