That is an excellent idea. There are many dishes that you can prepare in advance and freeze. > When > I make soups with potatoes in them and freeze it, I have noticed that > the potatoes get a funny texture. The potatoes have a gummy texture. >Does anyone have any other suggestions > of holiday type dishes that can be made in advance and frozen? i am not sure what your menu plans are, but most every traditional holiday dish i fix can be made ahead and frozen, just not the potatoes. Making up some nice appetizers ahead and freezing them is a good idea, too. Then you can put out a platter for people to nibble on while you finish the main meal cooking. Also, don't forget to involve your guests if your kitchen space allows for it. i have found that people enjoy helping in the kitchen, and it makes for a mose inclusive party environment. ~ pt ~ It is Christmas in the heart that puts Christmas in the air. ~ W.T.
