The recipe also comes from the Native Foods Restaurant Cookbook, but i added my notes for my adjustments in the [brackets]. Thai Peanut Sauce 3 Tbs. sunflower oil 1 cup chopped onion 4 garlic cloves, sliced 1 1/2 cups canned coconut milk 3/4 cup whole unsalted peanuts, roasted 3/4 cup rice vinegar [ i only used 1/2 cup with 1/4 cup water] 1/4 cup maple syrup 1/4 cup soy sauce [i used low sodium] 1/2 tsp. crushed red chili flakes (optional) Heat oil in skillet and saute onion and garlic until transparent and lightly browned. Place garlic and onion mixture in a blender with all other ingredients, and blend until smooth.
