If you don't have any seasoned bread crumbs like the Progresso brand i used, just use plain and add some extra garlic salt and Italian seasoning blend herbs to it; works fine. i think this could be easily vegan by using vegan margarine in place of the butter. If you give that a try, let me know how it comes out. Herb-Crumb Potatoes 6 to 8 medium potatoes, peeled 3 tsp melted butter 1/4 cup plain bread crumbs 1/4 cup seasoned garlic and herb bread crumbs [Progresso brand] 1 tsp salt 1/4 tsp pepper 1 Tbs finely chopped parsley 1 1/2 tsp rosemary, finely chopped or crushed Preheat oven to 400 degrees. Roll potatoes in melted butter, then in a mixture of the remaining ingredients. Place in a 9x9 inch baking pan that has been sprayed with non-stick cooking spray. If you also spray the tops of the potatoes with Pam or some other brand of non-stick cooking spray they will bake up nice and crispy-brown. Cover with foil and bake 50 minutes. Uncover and bake 20 minutes more or until tender.
