Ezevia ================================================= Wild Rice Stuffing with Mushrooms ================================================= This is a wonderful, traditional stuffing to serve for an elegant Christmas dinner. Not only is it a change from the routine bread stuffing, for one thing, but wild rice has a delicious nutty flavor that goes perfectly with turkey. To make it completely perfect, kids love this stuffing. If you're wondering where to come up with the chestnut puree, it's available at Earthy Delights. So is the wild rice. Just go to www.Earthy.com. 5 ounces wild rice <http://earthy.com/a_gourmet_rice.htm> 2 ounces unsalted butter 8 ounces fresh mushrooms <http://earthy.com/a_mushrooms.htm>: clamshell, oyster, and portabello - trimmed, rinsed and sliced 1 yellow onion, chopped 3 garlic cloves, peeled and diced fine 1 celery stalk, chopped 3 tablespoons chestnut puree 6 ounces ground pork sausage, fully cooked 1/2 tablespoon fresh parsley, snipped fine 1/4 teaspoon fresh sage <http://earthy.com/a_herbs.htm>, chopped fine 2 teaspoons salt <http://earthy.com/a_gourmet_salt.htm> 2 teaspoons coarsely ground black pepper Cook the rice according to package instructions and melt the butter in a saucepan. Add the mushrooms, onions, garlic, and celery and cook for about four minutes. Stir constantly. Set aside the cooked mushrooms until needed. Drain the rice and set it aside to cool. Use a food processor to mix and chop the mushrooms, chestnut puree, cooked sausage, parsley, sage, and salt and pepper. Blend until mixed, but not totally pureed. Remove the mixture and place it in a mixing bowl. Add the cooked rice to the mixing bowl with the mushroom and sausage combination. Use a wooden spoon to mix the rice into the mushrooms. Rinse and drain the turkey cavity, then salt and pepper the inside of the cavity before adding the stuffing. After watching the food network and Rachel Ray she had an excellent idea to make stuffing for individuals in muffin tins.. I loved the idea and did it for Thanksgiving, it worked out great and everyone loved them! ================================================= Truffled Mashers ================================================= It's practically a federal requirement that we serve mashed potatoes with our christmas dinner. Grownups love it, kids love it, and gravy loves it. But we don't have to let the potatoes go " blah " year after year after year. The very easiest way to dress things up a bit is also one of the most delicious things you can do to mashed potatoes. Just add some good quality truffle oil before you do the mashing part. 1 pound potatoes, peeled, cubed, and cooked until fork tender, hot 3 tablespoons truffle oil <http://earthy.com/a_truffle_oil.htm> 3 tablespoons melted butter 1/2 cup whole milk, warmed Salt and coarsely ground black pepper Mash the potatoes until smooth by adding small amounts of warm milk and butter at a time. I have a few recipes that contain meat that I use as a guide and add substitutions. And in person, I call " morning strips " , bacon, LOL. So who knows.
