Guest guest
Beau Monde Seasoning...spice island is one brand. " Mellow beefy flavor with broad tones of celery, onion and garlic. Widely sought for use in party dips and Bloody Marys. Marvelous on salads, green vegetables, or pot roast. " http://www.cookperfect.com/ob_beaumonde.htm I used to have some but I looked and no longer. I think it was pretty mellow though. The site says many people haven't been able to find it. I will look at the store though when I go and see if I see the ingredients. What concerned me about the above description was the term " beefy flavor " so it might have something in it too, like natural flavoring, that would make it unsuitable for me. another site: http://whatscookingamerica.net/Q-A/beaumonde.htm says: Beau Monde is a seasoning salt. It can be found in the spice section of your grocery store. I have a bottle in my cupboard made by Spice Islands. If you can't find it, ask your grocer to stock it for you. http://www.recipezaar.com/81985 This site says Spice Island no longer makes it. But here are two substitutions. 1 tablespoon salt 1 tablespoon bay leaf powder 2 tablespoons white pepper 2 tablespoons black pepper 1 teaspoon nutmeg 1 teaspoon cinnamon 1 tablespoon allspice 1 tablespoon mace 1 tablespoon cloves RECIPE 2 1 tablespoon cloves 1 1/4 teaspoons cinnamon 1 tablespoon salt 1 tablespoon bay leaf powder 1 tablespoon allspice 2 tablespoons ground black pepper 1 teaspoon nutmeg 1 teaspoon mace 1 teaspoon celery seeds 2 tablespoons white pepper ~ PT ~ Now this recipe, which i found in a 'Savor The Flavor of Oregon' cookbook that was compiled by the Junior League of Eugene, listed " beau monde " seasoning. i don't know what the bleep that is, and i even searched online and got no help... so i substituted season salt. When all else fails, go with what ya know; that's what Grams always told me. Anyone have a bottle of beau monde seasoning on their spice shelf? i'd love to know more about this stuff if you'd be so kind as to read me that label. Merci! Guest guest
Thanks for all that info. This cookbook came out in 1990, so must be beau monde seasoning was available then. Those substitution recipes sound great. i should try to make some and add a spoonful of unbeef broth powder to it and try it in this dip recipe. But really the plain ol' season salt works fine in the dilly dip. Odd too that those beau monde recipes didn't have garlic or onion powder in them and the description of the flavor suggested it had " broad tones of celery, onion and garlic " . ~ pt ~ I would feel more optimistic about a bright future for man if he spent less time proving that he can outwit Nature and more time tasting her sweetness and respecting her seniority. ~ E.B.
