Guest guest Posted December 15, 2005 Report Share Posted December 15, 2005 If you're lucky enough to have a Vitamix blender or a Champion juicer which will allow you to make your own almond butter, that would certainly work, but I don't have either of those, so I get the Maranatha raw almond butter (made here in Ashland, where vegans are relatively spoiled). We used to be able to get it in bulk at the co- op, and I'm sure that if you have a store or a buying club where you can make an order with the Mountain Peoples, it's still available in 15 and 25 pound buckets, but I get it in jars at the co-op or ShopNKart (the latter is usually cheaper). In traditional egg nog, the egg makes it thick and smooth. In the banana almond nog, both banana and almond butter contribute to the thickness, and the banana makes it sweet as well as smooth. Another option to the given recipe would be to add some soy lecithin for both smoothness and a little of an egg-like flavor. And yes, my recipe is basically making an almond milk with banana added. If you already had almond milk on hand, just that with banana blended in would be nearly the same thing. The already made almond milks available in the stores aren't quite as thick as what you would have if you just took the banana out of my recipe, though.
