Make sure you give it a good long time to marinate as it only gets better tasting that way. The original recipe had some sugar in the dressing, but i left that out for my taste; feel free to add it if you like it. Cauliflower Salad 2 cups thin sliced cauliflower 1/2 cup sliced black olives 1/2 cup sliced green pepper, cut into thin strips 1/4 cup chopped red pimiento 1/2 cup thin sliced green onion 1 tsp. minced garlic ~ Dressing~ 1 1/2 Tbs. lemon juice 1 1/2 Tbs. red wine vinegar 5 Tbs. salad oil [i use 3 Tbs. canola and 2 Tbs. olive oil] 1/2 tsp. salt 1/8 to 1/4 tsp. black pepper [to taste] Toss all salad ingredients in a bowl. Mix dressing ingredients and pour over veggies. Toss to combine. Marinate in refrigerator for at least 2 hours; best of marinated over-night.
