Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 This is a recipe i enjoy sharing with omnivores that i adapted from a regular cookbook's recipe. You can make this vegan by substituting the quorn tenders for some vegan form of chic'n-like TVP chunks. Also, feel free to use a different type of rice if you are not a fan of brown; i prefer short-grain brown rice for the nutty texture and taste, but regular white, jasmine or basmati would work just fine. Chic'n Curry Salad 1/2 cup brown rice 1 tsp. curry powder 2 Tbs. olive oil 1 Tbs. vinegar 1/4 cup minced green onion 2 cups diced quorn tenders [or chick'n-like TVP chunks] 2 cups diced celery 1/4 cup diced green pepper 1 cup Vegennaise [or mayo] 1/2 tsp. salt Pepper, to taste Cook rice and cool. Blend curry powder, oil, vinegar, and mix with rice, onion and chick'n bits. Chill. Just before serving, add celery, green pepper, mayo, salt and pepper. Mix well.
