Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 Here is a very easy chili recipe that can be done either in a crockpot or on the stovetop. Add more spices to your liking. You can add spice by buying chili beans in spicy sauce and next time I think I'll try a can of the Rotel along with a can of regular tomatoes. I made this for our company potluck. 2 tsp oil (for stovetop cooking only) 1 zucchini, sliced lengthwise, then in slices (so you have half pieces) 1 red bell pepper, chopped into medium sized pieces 1 medium onion, chopped 4-5 garlic cloves, pressed 1 Tbsp chili powder 3/4 tsp cumin 2 cans diced tomatoes, undrained 1 can chili beans in sauce, undrained 1 can pinto beans, drained and rinsed 1 can black beans, drained and rinsed 1 can whole kernel corn, drained and rinsed 2 small cans sliced olives, drained and rinsed toppings such as: shredded cheese, sour cream, chopped onion, crumbled tortilla chips If making on the stovetop, heat oil in a dutch over (very large saucepan) and saute the onion, pepper and zucchini. When crisp tender add all the other ingredients. Bring to a boil and reduce heat and simmer for 45 min stirring occasionally. If making in the crockpot, add all the canned items, top with the veggies and spices, stir well. Cook on high for about 2 hrs. Serve with the toppings and a fresh salad and crusty bread & butter. Thanks for sharing your recipe. i bet it was a big hit at your company potluck.
