Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 PT, I was finishing my Christmas baking last night (all of which has now left the house, so I don't eat it all) and had to fill in some space in the trays... so I made the Russian tea cakes you posted - they were awesome! They came out really well even with whole wheat pastry flour (I don't have any white flour). I made one batch as you listed, and the second batch I added a teaspoon of cinnamon to the dough, and rolled them in cinnamon/powdered sugar. They perfectly with my trays, as every thing was brown & white - choc. cinnamon crisps cut out into tree shapes, tiramisu eclairs, then the white tea cakes and the cinnamon teacakes.... it ended up looking really pretty! :-) Oh, btw, I also did them completely in the food processor. Whizz the butter etc., then add the flour and whizz til it comes together. Scoop out little balls with a tiny ice-cream-type scoop. Really fast and easy, and I really appreciated that last night! :-) Thanks, Amy PS I ended up using the karo syrup in the icing for the choc. cinn. crisps - it took a while to completely dry,but when it did it was really hard, good enough to not break up in travel.
