[recipe] Artichoke Rice~ vegan

This recipe turned out really well. i served it warm,

and used vegan mayo in place of the regular mayo. :)

 

Artichoke Rice

 

1 cup rice

2 cups no-chicken broth [or veggie broth of your choice]

2 (6 1/2 ounce) jars marinated artichoke hearts ~ with liquid

1/3 cup Vegenaise

3/4 tsp. curry powder

1/4 tsp. garlic powder

4 green onions, sliced

1/2 green pepper, chopped

12 stuffed green olives, sliced

 

Cook rice in veggie broth until tender and remove from

heat. Drain and chop artichoke hearts; reserve marinade.

In a small bowl, blend together marinade with the vegan

mayo, curry and garlic powder. Stir marinade mixture into

rice. Add chopped artichokes, onions, peppers and olives;

toss well. May be served warm or cold.

Yield: 6 servings

now, by stuffed olives what exactly do you mean, stuffed with pimento or

those huge olives you can buy at the deli stuffed with different fillings?
