This soup can express winter's goodness to me. If you leave out the optional garnish of sour cream it is perfectly vegan as well. As with most soups, this tastes even better the next day when the flavors have time to really blend with eachother. Enjoy. Cabbage Soup 2 cups chopped onions 1 Tbs. olive oil 2 cups diced carrots 2 cups diced potatoes 2 cups diced celery 8 cups no-chicken broth 1 large head green cabbage, cored and chopped 1/4 tsp. caraway seeds Garlic powder to taste Salt and pepper to taste Sour cream (optional) In a large soup kettle, saute the onions in the olive oil until soft. Add carrots, potatoes, celery and broth. Bring to a boil and reduce heat and simmer covered for 30 minutes or until vegetables are tender. Add cabbage and sprinkle with caraway seeds. Do not stir. Cover and cook another 5 minutes or so. Stir and add seasonings. Cook for an additional 5 minutes. Serve garnished with sour cream if desired.
