Reubens vegetarian (was: Re:Cabbage Soup~ Sherry)

PT, you've never had a Reuben???? I live for them. They're like a

grilled cheese sandwich. I make them by mixing some mayo with Heinz

chili sauce or ketsup and sweet pickle relish. I butter one side of

two pieces of dark rye bread and spread the mayo mixture on the other

side of each slice. Then I lay on a slice of swiss cheese on each

slice, then mound saurkraut on one of the cheese slices. Close it up

and put it in a skillet with a lid on medium low. Put on the lid,

flip when one side of bread gets toasty. The lid makes the skillet

into a little oven, so the kraut gets warm and the cheese melts. Delicious!

i love these sandwiches! i use cheddar or provolone

instead of swiss, just because that's usually what i

have on hand. these are good with those fake turkey

deli slices too.
