Cucumbers are particularly cooling to the palate in the heat of the summer. As a child, I remember feeling comforted if I could at least find a cucumber raita on a restaurant menu - the other options all looked too exotic! 2 1/4 cups plain yogurt 1 large cucumber, peeled and shredded 1 fresh hot green chile, seeded and finely chopped 1/2 teaspoon ground toasted cumin 1/4 teaspoon cayenne pepper 1/4 teaspoon salt, or to taste Whisk the yogurt in a bowl until smooth and lightened.
