Rich Chocolate Cake

this is hands-down my daughter's favorite cake recipe. It is from the

Post Punk Kitchen website--awesome vegan recipes there : ).

 

3/4 c. whole-wheat pastry flour

1 c. flour

2 tsp baking powder

1 tsp baking soda

3/4 c. baking cocoa

1/2 tsp salt

1 c. plain soymilk, warmed

1/2 c. canola oil

1 1/2 c. maple syrup

1 tsp apple cider vinegar

2 tsp vanilla

 

the directions on website are little more detailed but I just whisked

the dry and tossed in wet ingredients, mixed and poured into greased

9 " cheesecake pan. baked at 350 degrees for 20 minutes I think??--till

when it looked done and knife comes out clean from center. we were

going to make a vegan PB/chocolate frosting for it but just had it

plain--it was really good and moist.
