Guest guest Posted August 11, 2006 Report Share Posted August 11, 2006 -Cilantro is one of the most unique in flavor of herbs. I cannot imagine salsa without it. But like most herbs if over done it loses it's affect and becomes over powering. It is not always easy to get the right balance and depends on the food that it is complimenting. I always try to keep a record of 'how much' and 'with what'. Last year I bought a huge bunch of it thinking it was parsley. Dried it but the flavor is sure not the same. Now when I make soups I toss a large amount in, the flavor isn't as powerful when cooked. I don't think it tastes anything like parsley either. I usually sub parsley with cilantro in a recipe.
