You can read about it here: http://www.foodrevolution.org/askjohn/35.htm we (my husband, daughter and myself) have all ate with no adverse effects. It is really good though a little bit dry. We put a lot of gravy on it. The only reason why I wouldn't eat is because it is not vegan. And I've struggled over the years with whether or not free range and organic eggs/ dairy is good enough. If you aren't vegan and not so worried about possible food allergies then go for it. The directions for how to cook it are similar to the tofurky and unturkeys and the instructions are on the box.
