You just have to bake less time is bascially all I've found that is different. I really feel for you, with fund raisers... I really dislike them and would far rather pay for somethings than go to all the time and trouble that occurs with fund raisers. My time and money is better spent other ways.... Judy My eldest is now in 8th grade and that means tons of fund raising (like bake sales) to raise money for the end of year class trip, yearbook, and other projects. I would like to convert some of our many quick bread recipes to muffins (many parents complain that there needs to be healthier options than all the brownies and rice krispie treats at the bake sale table). Actually, maybe since this is my first child, I'm looking forward to the fund raising thing. Ask me again at the end of the year though. :-) This morning I made the Best Buttermilk Pancakes out of the files. I substituted 1/2cup of white flour with barley flour. They were yummy! (And I am not a pancake lover.) I thought it made a huge amount but they've been disappearing all morning. I have a few left over that I'll freeze. (I hope that works OK.) Thanks! Can't wait until my nephew is old enough to start doing that for him / with him The only difference I've noticed so far mkaing muffins out of sweet bread recipes is that they cook up way faster. I've made Donna's Lemon Bread (w/ blueberries) & her Rhubarb Nut Bread and both made excellent muffins, especially the lemon bread - I could hardly keep my fingers out of the batter lol. At bake sales, I can buy individual slices or muffins or cupcakes and do not eat the entire batch!!
