Spinach And Potato Casserole

Spinach And Potato Casserole

 

1 tablespoon olive oil

1 tablespoon butter

2 large garlic cloves -- finely chopped

1 frozen package of spinach or fresh bunch

freshly ground pepper

5 large potatoes -- (5 to 6)

2 cups medium cheddar cheese -- shredded

2 ounces feta cheese -- crumbled (optional)

1 tablespoon sweet paprika

 

Boil the potatoes and mash using milk, butter and salt to your taste. Preheat

oven

to 350 degrees. In a large skillet heat oil and butter. Add garlic and saute

until

just fragrant.

Add the frozen/fresh spinach and saute until just wilted, but not soft. Stir in

lots of fresh ground pepper.

Spread potatoes in a lightly greased 9x12 " baking dish. Cover with the sauteed

spinach and cheddar cheese, then sprinkle the feta and top with paprika.

Bake 20-25 minutes until hot and cheeses have melted.

AT the risk of sounding really stupid, how do you cook

this? Crockpot ?? Stove?? How long??

In the orginal post the directions were included... Here they are.... They must

of gotten snipped off in the replies.

Thanks Tamara, it sounds awesome. I know, how can you go wrong with

cheese, garlic and olive oil? I bet it would be super with some

sliced tomatoes thrown on top of the spinach....Rats, now I have to

go to the supermarket!!

Great idea with the Tomatoes. I was thinking of adding some sauted mushrooms

and onions too to the spinach.

wondering if it was as good as it sounded. I haven't had a chance to get to the

Hi Tamara,

 

I actually bought the ingredients to make it for tomorrow night's

supper. I am OD'ng on Potatoes!! But I love them so even though I'm

looking like one more and more. You can't do anything wrong with

Taters!!!!

 

***Please add milk as an ingredient for this recipe in the " file "

section.***
