When I've tried to eat them under ripe, they taste so chalky and tart. I love them when buttery yellow inside. I peel and slice into a bowl. Grab a fork and eat the whole thing.... I do know that many Indian pickles are made from green mangoes. The chutneys usually use ripe mangoes.
