Those vegan monks do use MSG in their cooking. They have an interesting section about MSG in their foreword of the book. They basically claim that MSG is not bad for you if you eat a purely unadulterated animal-free vegan diet, and that those who do experience troubles digesting it do so because of the dairy or eggs they consume. *shrugs* They go on to say: " If you want, in the soups you can substitute salt, but in a couple of the flavoring broths it is just not possible to get satisfactory flavor without it. Even in the recipes that contain MSG, not much really goes into a serving since it is diluted in the broth which flavors the dish.
