I've noticed with the larger dried ones that I collect quite a bit of skins from them on top of the cooking water to discard. I don't really have a recipe, but I like to add a lot of chopped carrots (the orange looks neat with the pale color of the beans), onion, celery, garlic and dill seasoning sets them off nicely.
