I think the reason behind *why* you are/want to be vegetarian make the most impact on if you taper off, or do it overnight. Im sure my views are not shared by many on this list, as i still cook meat for my family, etc... i dont eat meat for health reasons. My body cant handle it for whatever reason, and i get very ill. But I think because I dont have an ethical issue eating meat, it doesnt bother me (other than health-related) to eat it occasionally. however, if someone is not eating meat because of more 'ethical' reasoning, im sure it would greatly bother them greatly to eat it. Having said that, I try hard to avoid " empty calories " (a phrase used by a nurse during a recent hospital stay). I have noticed that some of the recipes posted are pretty heavy on the butter (or margerine), other oils, and sugar; those I would avoid or at least try to minimize! I'm very calorie concious and keep track of every calorie that I eat. I've lost almost 50 pounds in the last year, and its staying off. -- James P.
