I found this in the files, made it to take with me to

a picnic today. It's so good I got into it already.

 

Portia

 

 

Swedish Salad (Svenske Sallad)

 

1 med. head cabbage, shredded finely

1/2 red bell pepper, julienned

1/2 green bell pepper, julienned

1/2 yellow bell pepper, julienned

2 celery stalks, finely chopped

2 green onions, chopped and include the tops

1 can pickled or unpickled beets, drained & julienned

1 cucumber, grated or finely chopped

2 carrots, peeled and shredded

(Optional) 2 hard boiled eggs, chopped

Mix all together and chill until ready to toss with

salad dressing and serve.

 

Dressing

 

1/2 cup sugar

1/4 cup white vinegar

1/3 cup canola oil

1/2 cup ketchup

1/3 cup boiling water

1 tablespoon minced onion

1 teaspoon salt

dash of black pepper

 

Pour the boiling water over sugar and stir until

dissolved. Let cool for a few moments and add balance

of ingredients and mix well, you can place all in a

jar and shake.

Chill and toss with salad before ready to serve.

Everyone's gonna love that Portia; Donna shared it when I asked for

Scandanavian recipes for a neighborhood festival here and I made it

and they gobbled it up :)
