Hi Robin ~

We're going camping this weekend. No electric; limited cold

storage too. So far I have two meals planned:

spaghetti w/ sauce and veggie burgers on rolls. The veggie burgers

could be the first meal thus freeing up some cooler space. A package

of spaghetti and jarred sauce won't need to be refrigerated. I'm

thinking of cutting up some veggies (green peppers, carrots etc)

into 'sticks' before we go as well as packing some apples and

nectarines, - easy to grab snacks (or light lunch) for all.

Thanks for the ideas....we have Friday PM meal and snack, all meals for Sat and

Sunday and possibly Monday and then a breakfast on Tuesday. We haven't decided

if we are coming home Monday or Tuesday. Look forward to hearing all those great

ideas.

Take canned veggies and canned soups. They are the right size to finish up at a

meal and only require heating. This way if you don't have a good water source

you won't need it to cook these things. Grits, oatmeal are good too. Get some

Parmalet milk(cow milk in a 1 qt. box that doesn't have to be refrigerated until

opened, it is just like out of a carton, no dilution necessary). Silk Milk

comes this way also. Walmart has the Parmalet milk and Sam's club has both

Parmalet and Silk Milk in cases of 1 qt. box. We only buy it this way, because

of the long shelf life until opening. You never run out of milk this way.

These are the same kind of boxes that you buy the Almond and Rice milk in. They

are great. Especially good to have with power failures too.

 

Try some Vegetarian Bush Baked Beans. Pancake Mix, with only water needed to

add, is another quick breakfast. I love the Worthington Products, because they

are canned and require little cooking before ready. They don't have to be

refrigerated until cooked. http://www.kelloggs.com/brand/worthington/ We use

these all the time. Just heat up your hot dogs in the broth they come in and

put on a bun. Also cut some up and add to your Baked Beans. I like the Big

Franks and the Vegelinks best. Take some potatoes and make mashed potatoes or

steam fry them. Wrap them in foil, but I advise cutting them into smaller

pieces first, so they will bake faster. Put these wrapped potatoes into your

hot grill coals. Take some jar spaghetti sauce and some dry noodles. Take some

onions and canned mushrooms to saute and add. P.S. Don't forget a can opener.

 

Another quick meal that we do on campouts is Haystacks. It is in the Mexican

file folder. Here is a repost of it.

 

Haystacks ( very quick delicious meal in 5 minutes)

1 bag of Corn Chips

1 lg. can of Bush Chili Beans or make your own

Sour Cream

Grated Cheese

Chopped onions

Chopped Olives

Chopped Lettuce

Chopped Tomatoes

Chopped Green Peppers

 

Heat the Beans. You can either keep the Salad type ingredients separate or

mix them together like a salad( I do this). We then let everyone make their

own haystack when they are ready to eat. Do it in this order. Put some

Corn Chips your plate first. The put some hot beans over them. Then the

grated cheese(being next over the hot beans helps it to melt/soften some),

sour cream and the salad type toppings. Add salsa if you like.

Hi, Robin.

Check out breakfast ideas in the files.

Here is an easy one that the kids can make themselves.:

 

Breakfast Tortilla Roll-up

 

4 8-inch flour tortillas

1 cup peanut butter

2 medium bananas, sliced

6 tablespoons raisins

 

For each sandwich, spread 1 side of 1 tortilla with 1/4 cup peanut butter.

Cover

with half of 1 sliced banana and sprinkle with 1 1/2 tablespoons raisins.

Roll

tortilla up tightly; cut in half to serve. Repeat to make 3 more sandwiches.

Sandwiches can be made up to 12 hours in advance, wrapped tightly in plastic

wrap and refrigerated.

For a change, substitute 8 ounces softened cream cheese combined with 2

teaspoons honey and 1 teaspoon grated orange peel for the peanut butter.

Makes 4 servings.

Also, from the files:

Barbecued Skillet Veggie Dogs

 

We like these with homemade rolls, sprinkled with

cheese, coleslaw and a few oven fries.

 

3/4 cup catsup

1 tablespoon soy sauce

1 teaspoon chili powder

1/2 teaspoon salt

1 teaspoon sugar

1/2 teaspoon hot sauce u can use less

1 cup water

8 to 10 veggie dogs

 

Mix all, except the franks, well and put in a

skillet and bring to a boil.

Add franks and simmer 15 to 20 minutes.

Tastes great and is fast.

Makes 4 to 5 servings.

BOCA® Sloppy Joe's

 

1/4 medium onion, finely chopped

1 tsp. vegetable oil

1 pouch (1 cup) frozen BOCA Meatless Ground Burger

1/2 cup Kraft Original Barbecue Sauce*

1 TB Claussen Sweet Pickle Relish

2 hamburger buns, split

 

Cook and stir onion in hot oil in small nonstick skillet on medium heat 3

minutes or until tender.

 

Add ground burger, barbecue sauce and relish; mix well. Cook 3 minutes or

until heated through,

stirring occasionally.

 

Serve in buns.

 

Serves: 2.

Sloppy Joes

 

1 Can. Worthington Vegetarian Burger or 1 pkg. Morning Star Farms Crumbles

 

Brown this in a little hot oil in a frying pan, stiring often.

 

Add some diced onions and green peppers

Cook until tender crisp. Add one can of Hunts Sloppy Joe Sauce and heat

thru. Serve on Hamburger Buns.

Have an assortment of fresh vegetables.

I have used small potatoes...halved. mushrooms, squash, onions.

What ever veggie you want.

Tin foil.

Have each child pick their own veggies and wrap in tin foil and put on

grill.

I usually add some ice to " steam " the veggies.

BTW.... block ice will last longer.

When my sis and I camped all the way to Oregon we ate

tofu scramble off a camp stove in the mountains and it

was the BEST tofu scramble ever.

 

We use Jim's tofu scramble from

files and add spinach and mushrooms. We even have a

campfire/stove toaster for toast. Yummy.

My family has grown up camping. And I love to dutch oven cook. So, now I

am looking at some of the recipes in the file that I can convert to the

dutch oven.

I have found the pizza casserole that would be perfect.

Sue,

We also grew up camping and we still have our cast iron dutch oven. A

whole meal can be preapred in it including biscuits/rolls. When I

used the term " fishing " I didn't fish but some members of our camping

group did. We would make what we called " camp stew " and we still love

our collection of cast iron although the dutch oven isn't used as

often as it once was. Due to fire danger and bear problems camp fires

are no longer left unattended.

Corn on the cob is at it's peak now and would be great on the grill

or pre-cooked at home and re- heated.

Stuffed peppers are easy to prepare in advance and heated at the

camp.

either lentils or mung beans and basmati rice in with spices and

herbs to make kitcheree or another soup. Just add water and cook.

we love camping .. it's me, my hubby adn our two (ages 8 & 10) we cook on a

tiny back

packing stove.. one burner.. it burns alcohol.. very neat.

 

we always bring veggie burgers on buns.. we get the soyboy burgers as they need

a little

less 'refridgerating "

I freeze juice boxes and they keep cool stuff cool, and are later drinkable.

 

I usually bring a package of smart dogs and a can of vegetarian beanies... to

make

beanines & weenies.

 

I usually bring an advocado and a couple of tomatoes.

 

when we have the veggie burgers, I 'll cut up some avocado and tomato and we

have those

on the burgers and don't bother with other condiments. they are really very

good that

way..

 

I save a tomato and some avocado to go with another dinner meal...

we make simple bean burritos.. all that takes is heating the canned refried

beans.

scoop some onto a tortilla, add a little chopped tomato and some avocado.. YUMMM

 

we've also made baked dinners.. or 'hobo dinners'

 

you can cut up taters, add some carrots (usually we bring some baby carrots..

easy

snacking) and any other veggies you might like... if you wanted to use some

frozen

veggies, you could freeze before you go, and use them earlier..

 

just put some veggies in aluminum foil, fold it up and let it all bake in the

campfire. If you

would like you can also add some crumbles, any onions or things.. but anyway you

make

it, this is a yummy meal.

 

we also always pack things like granola, cereal that can be eaten dry or with

small boxes

of soy milk..

nuts,

cliff bars.. or kids cliff bars

apples

lots of water.

 

 

we bring a bigger carton of chocolate rice milk (rice cuz my hubby's tummy

prefers rice to

soy) and we simply heat that up on the stove for hot cocoa.

 

I'm sure I'll think of other things..

 

I hope some of this will give you ideas!

When I used to backpack, we always cooked a couple of packages of Knorr Leek

Soup and added lentils, garlic, macaroni and a few chunks of tofu. If you're

cooking at camp and not so worried about the weight of what you're cooking, you

can add potatoes (or substitute potatoes for the macaroni) and extra onions to

the mix. Be generous with the garlic. This makes a very high energy/high

protein meal which is also very satisfying, especially in cooler weather.

Nearly everyone seems to like it......I've never cooked this at camp and had

left-overs.

Sounds great. I need to check out that recipe. I sure hope we can go camping

when the weather gets cooler.
