I'll warn y, it ain't pretty.... and I kneaded/stretched way more than 6 times as noted in the recipe, and I'm still not convinced the strands are all one direction... but I had other things to get done too! My favorite way is to mock up a dish I used to eat in Chinatown (NYC) in my college daze. It was called Pepper Steak (I'd also get it as Pepper Steak with Tomatoes when I had a little more to spend). It consists of onions, green peppers stir-fried 1-2 minutes, add strips of seitan and stir-fry another minute. Add tomato wedges and sauce last, and thicken with cornstarch/H2O mix. Or are you looking for some flavoring broth recipes? i have the 'Simply Heavenly' cookbook and those bearded dudes eat a lot of seitan. Let me know what sort of thing you are interested in and i will find you some recipe ideas. i haven't tried seitan making yet, but that is one thing i really want to do. i am thinking a bread machine would come in handy for that process as well. How did you mix your gluten up? It is a great idea and so cool. And recently (a bit offtopic) I read about how these 3rd world families would take water, bottle it up and place the bottles on their (inexpensive) few pieces of black roofing. The sun exposure (along with the hotter temps reflecting off of the black roofing) would kill much of the junk in the water that would cause them illness. Ok, I gotta know more about that Cheez that is vegan but looks like a standard solid brick of cheese. And that wonderful looking vegan sausage!! And the cool step by step photos on seitan. Fantastic stuff. ...oh and what a cute apple shaped cutting board.
