Guest guest Posted February 9, 2006 Report Share Posted February 9, 2006 The dressing for this salad is so good that if you don't need to serve a salad for 6 people you can simply make the dressing up to keep in the refrigerator for your own individual salads during the week. Just keep the salad ingredients in separate bowls until you want to eat them. Avocados and chow mein noodles are good in this salad, too. Mandarin Salad 2 bunches loose leaf lettuce (romaine, red leaf, etc.) 2 (11 oz.) cans mandarin orange slices, drained 1/2 cup salted peanuts Dressing: 1/2 cup sugar 1 cup vegetable oil 1 tsp. Dijon mustard 1 tsp. sea salt 1/3 cup white wine vinegar 2 Tbs. minced green onion 2 Tbs. poppy seeds Tear lettuce into bite-sized pieces and combine with oranges and peanuts in a large bowl. For dressing: Combine sugar, oil, mustard, salt, vinegar, onion and poppy seeds in a jar. Shake well to blend. Toss the salad with a little dressing before serving, and serve the rest of the dressing on the side for anyone who wishes to add more to their serving.
