I usually doctor them up with added egg and tofu. However we are looking for a healthier alternative with less added junk. I've been looking for a recipe, and I have checked the recipes in our files, but I have no idea how to replicate these. Does anyone have a good (but healthier) facsimile? Thanks! Does your grocery store carry asian noodles? Maybe you could get the ramen noodles there and use a healthy broth. I like the Sun Luck brand. At Japanese markets you can usually find yaki soba noodles in the cooler. These are sometimes a little oily-feeling but they are long and curly and fun to slurp. They come with a little flavor packet too but it's awfully salty. I posted my Asian slaw recipe a while ago. It uses the Ramen noodles but not the packets. You could use any fine, thin noodle I would think. What I'm looking for is a recipe that replicates the ramen with flavor packets (the vegetarian version) without actually using the flavor packet. These soups must be based on some classic Asian soup, just as Kraft Mac N Cheese is based on a classic macaroni and cheese gratin dish. Guest guest Posted September 20, 2006 Report Share Posted September 20, 2006 One way I use them, beside the Asian Ramen noodle salad, is to add them to boiling water, let set for 5 minutes, drain them. and stir them into a stir fry right at the end.
