ISO: ramen recipe

My daughter loves ramen - you know those packaged noodles with the

little flavor packet? I usually doctor them up with added egg and

tofu. However we are looking for a healthier alternative with less

added junk. I've been looking for a recipe, and I have checked the

recipes in our files, but I have no idea how to replicate these.

 

Does anyone have a good (but healthier) facsimile?

those flavor packages have meat in them, or at least all but one that I found a

long time ago.

The kind we've been buying doesn't list any meat products. But it still

has other nasty stuff.

We have ramen cabbage noodle salads in the files, I

believe they are made without the packets. Those

things are MSG bombs.

Hi Sharon,

I used to love that stuff too :) Those flavor packets do have a lot

of junk in them though, you're right about that.

 

Does your grocery store carry asian noodles? Maybe you could get the

ramen noodles there and use a healthy broth. I like the Sun Luck

brand. At Japanese markets you can usually find yaki soba noodles in

the cooler. These are sometimes a little oily-feeling but they are

long and curly and fun to slurp. They come with a little flavor

packet too but it's awfully salty. They are really for frying but you

could use them as ramen noodles if you wanted to. :)

My neice made a delicious salad with ramen noodles. She broke them up

in the bags. Don't think she used the packets. It was great!

I posted my Asian slaw recipe a while ago. It uses the Ramen noodles but not

the packets. You could use any fine, thin noodle I would think. AmyF

versatile. What I'm looking for is a recipe that replicates the ramen

with flavor packets (the vegetarian version) without actually using the

flavor packet. These soups must be based on some classic Asian soup,

just as Kraft Mac N Cheese is based on a classic macaroni and cheese

gratin dish. I just have no idea how to go about it, not being very

experienced with Asian cuisine.

One way I use them, beside the Asian Ramen noodle salad, is to add them to

boiling water, let set for 5 minutes, drain them. and stir them into a stir fry

right at the end. It is a great change to serving with rice.
