This sort of reminds of one of my favorite dishes at an Italian place

back in DC (Jenni if you're here - Il Pizzico on Gude Drive

Rockville!). I don't remember the name of the dish but it was penne,

topped with a nice savory tomato sauce, then they topped it with

shredded arugula. I got that a lot! :-)

 

I will try your daughter's recipe tonight.

This does sound wonderful! I'll have to try it with some vegan feta.

Won't be melty but might have a similar flavor. I think it's

fantastic that there is a cooking class available for your daughter -

that has healthy options, too! Good luck with the leftover war LOL I

lost today. Dh took the veggie tamales to work that I was going to

eat for breakfast. I'm just not an early bird :)

i think it would work great with vegan feta.

Do you make your own out of tofu?

 

Now you have to learn to hide those leftovers better

if you are not an early riser! ;)

My husband *loved* this!! (I loved it too.) I sent the recipe on to my

MIL and my twin sister. I wouldn't have thought to put the sunflower

seeds in there but it was very tasty.
