Rhubarb Custard Cake-NOT for calorie conscious : )

1 package yellow cake mix (not sure if veg, we make

it homemade)

4 c. chopped rhubarb

1 c. sugar

1 c. heavy whipping cream

 

 

prepare cake batter and pour into greased 9x13 pan.

sprinkle with rhubarb and sugar. pour cream over top.

bake at 350 degrees for 40-45 minutes. cool for 15

min. before serving. chill leftovers.

 

12-15 servings.

 

NOTE: this is my very favorite recipe for rhubarb. it

grows like crazy in our backyard here in Iowa and we

desperately wait for spring each year for it. many

times it will start poking up before all snow is

melted. I had to laugh today at Target because they

sell it for $4/lb when most anywhere in this state,

it's considered a weed : ).........
