Guest guest Posted March 17, 2006 Report Share Posted March 17, 2006 Why can't you just replace the eggs with an egg replacer (the powdered kind) and you can turn soymilk into buttermilk just as you can with regular milk...try this site for alternative to eggs....the Ener-G egg replacer they mention is good at least for my needs. Sometimes I add a little more oil or butter though to the recipe when using this replacer. http://vegweb.com/recipes/subs/egg-sub1.shtml For the buttermilk you can take 1 cup soy milk and add 2 TBSP lemon juice or vinegar (even cider vinegar if you want) and let it sit for about five minutes. Optionally you can add 1 TBSP oil to this mix. And of course for the butter just use Earth Balance as it is vegan. I have found it to work in baking.
