Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 Here is a recipe for the slowcooker that i tried and loved out of Robin Robertson's slowcooker vegetarian cookbook. i had to make a few adjustments and additions to suit my tastes, but i put the notes in below [*] and the additional items in [brackets] so you can see the original recipe clearly enough if you want to just do it like she makes it. Cooks for 6 to 8 hours, so it is great for those busy days. Chipotle Potato Soup with Frizzled Leeks 2 leeks (white part only), trimmed and well washed* 2 cloves minced garlic [this is my addition] 2 Tbs. olive oil 1 1/2 pounds Yukon Gold potatoes, peeled and diced** 6 cups vegetable broth *** Salt Pepper [another addition of mine] 1/4 to 1/2 cup sour supreme (or sour cream)~ [addition of mine] 1 or 2 chipotle chiles in adobo sauce Coarsely chop one of the leeks and set the other one aside. In a saute pan over high heat, place one tablespoon of the olive oil, one chopped leek, and the garlic; cook until the leek is just softened. Add saute, prepared potatoes, and broth to crock pot. Cover and cook on LOW for 6 to 8 hours. When potatoes are soft, use an immersion blender [or blend on small batches in food processor] to puree the soup. Add salt and pepper to taste. At some point while soup is cooking, finely chop the other leek into thin matchsticks. Heat the remaining tablespoon of olive oil and saute leek until pieces are browned and frizzled. Transfer to a paper towel to drain and reserve to sprinkle over individual servings. Also, while soup is cooking, puree the chilies in the adobo sauce until smooth. Set this aside to swirl into individual servings, too. Before serving soup, whisk in the sour supreme [sour cream], if desired. Ladle soup into bowls, swirl a small amount of chipotle puree into each serving, to taste. Sprinkle top of servings with frizzled leeks. Look in the " ethnic " aisle next to the taco kits, *lol* To me they are very hot, but chiliheads will disagree. I use 1 to 2 chilis per pot of stew, and it's just bearable. Chipotles are smoked jalapenos, btw. > What is this and where can I find it?
