Your thoughts on the subject sound a lot like where i am at on this issue. i feel there are so many more things to eat as a vegetarian. If soy were an issue i would have no trouble avoiding adding it to my diet; i admit i might miss crispy stir-fried tofu, but could live without it. i don't drink milk at all.... never did when i was a child, so i never started to gulp down soy milk when i avoided many dairy products; i still prefer water and some iced tea for beverages. i did get into the Silk brand soynog this holiday season though, but that was only a 1/2 a cup serving every day or so. Faux meats are cool to buy here and there, but i am finding i prefer to make my own veggie burgers out of beans, grains and such.... avoiding soy there is easier now, too. I am not worried about protein, just have gotten into using it as a binder. Actually the kind that I like I can't seem to make so I could do without it here at home. I take it there are some recipes on file for burgers and loaves? I get lost in there. LOL I have been researching the issue of the soy and kind of think I overdo it and that it is in so much stuff that I need to stop the gorging on it since there is a growing lit on it that has a problem with it. If I remember correctly when food combining was the in-thing that beans and rice make a complete protein. And that even beans and bread (tortillas) or rice and bread (tortillas) are complete.
