Guest guest Posted March 17, 2006 Report Share Posted March 17, 2006 Hi all! All the wonderful recipes posted about cabbage inspired me to look up my sauerkraut salad recipe. I usually make this for potlucks and it is well received, even by those who don't like sauerkraut. It's kind of like a condiment in a way. The ingredients (esp amount of sugar and oil) can be tweaked to make it healthier, but this is how I make it to take to a group. Paula Sauerkraut Salad 1 large (32 oz) jar sauerkraut, drained 1 onion, chopped l green bell pepper, chopped 2 Tbsp. pimento, chopped (I use more than this) 1 or 2 grated carrots 1 cup celery, chopped 3/4 cup, (or up to 1 cup), canola oil 3/4 cup, (or up to 1 cup), white vinegar 1 cup sugar 1 tsp salt Mix the drained sauerkraut and the rest of the vegetables in a large bowl. Mix the salt, sugar, vinegar, and oil in large microwave safe measuring cup, and heat just long enough to get the mix hot, then stir to dissolve the sugar. Pour this immediately over the sauerkraut mixture and stir. Put in a covered container and refrigerate overnight. This keeps very well and seems to get better over time.
