Melongene is eggplant and is also called Bhigan here in Trinidad and

somewhere else I suppose.

Bhaiganee

Bhaiganee (pie made with eggplant (melongene)

Indian dish made in Trinidad during the Indian festival known as

Divali.

1 recipe phulowrie batter

1 eggplant

Oil for frying

¼ cup flour – salt and black pepper added

To Make Bhaiganee:

Slice eggplant in ¼ inch slices. Coat slices with the seasoned flour

then pat phulowrie batter onto both sides. Fry in hot oil until

cooked on both sides. Drain on napkins/paper towels.

Enjoy!

Phulowrie is a dish that I had posted before you are just using that

batter in this recipe and believe me I dont intentional leave out

the " English " words but since this is what I know sometime I just

take it for granted that other know what it is as well. So if you

dont have a clue what I am speaking about just ask and I will try to

clear it up. OK? Thanks for understanding. :)
