Blueberry Freeze

 

By varying the amount of soymilk or rice milk, you can make this smoothie thick

enough to with a spoon or thin enough to drink through a straw.

 

1 cup frozen blueberries

1 cup frozen banana chunks

1 1/2 to 3 cups fortified vanilla soymilk or rice milk

1/4 cup apple juice concentrate

 

Place all ingredients into blender.

Process on high speed until smooth, 2 to 3 minutes, stopping blender

occasionally to move unblended fruit to the center with a spatula.

Serve immediately.

Makes 3 to 4 cups.

Calories 111, Fat 1 g, Carbs 25 g, Protein 2 g, Sodium 18 mg, Fiber 2 g.
