I went ahead and stuck with the sharp cheddar that was listed because that is one of my favorite types of cheese. I almost added canned tomatoes/jalps (that I would have drained) instead of the fresh jalps. Went ahead with the jalps. Excellent stuff - making more this week. I'm not sure where Lori is but I can tell you that I'm in need of another recipe fix. I'm 2 for 2 with those recipes - Excellent results all the way around.
