Guest guest Posted August 18, 2006 Report Share Posted August 18, 2006 Breakfast in a Cup 3 c cooked Lundberg Jubilee 1 c grated cheddar cheese, divided 1 can (4oz) diced green chiles 1 jar (2oz) diced pimientos 1/3 c skim milk 2 eggs, beaten 1/2 tsp ground cumin 1/2 tsp salt 1/2 tsp ground black pepper veg. cooking spray Combine rice, half of the cheese, chiles, pimientos, milk, eggs, cumin, salt and pepper in a large bowl. Evenly divide mixture into 12 muffin cups coated with cooking spray. Sprinkle with remainingi cheese. Bake at 400, 15 mins. or until set.
